• 1 giant onion, chopped
• 2 cloves of garlic, minced
• four cups of vegetable broth
• 1 cup of water
• 1/2 cup of grated Parmesan cheese
• 1/4 cup of heavy cream
• Salt and pepper to taste

- 1 cup milk
- 1/2 cup heavy cream (optional)

– Gradually whisk within the milk, then the vegetable broth.
– Bring to a simmer and cook, stirring occasionally, till the soup has thickened, about 10 minutes.
– Add the broccoli and cheddar cheese and prepare dinner until the broccoli is tender, about 5 minutes more.
