  • 1 complete chicken (about four pounds)

  • 1 loaf (1 pound) cranberry pecan bread, cubed
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon dried cranberries
  • 1 tablespoon chopped pecans
  • 1/4 cup melted butter
  • 1/2 cup chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a big bowl, combine the bread cubes, onion, celery, and pecans.
  3. In a separate bowl, whisk together the chicken broth, the melted butter, the egg, the sage, the thyme, the salt, and the pepper.
  4. Pour the wet elements over the dry elements and blend till just combined.
