Ingredients

Ingredients:

– 1 entire chicken (about 3 pounds)
– 1 onion, chopped
– 2 carrots, chopped
– 2 celery stalks, chopped
– 4 cloves garlic, minced
– 1 tablespoon floor cumin
– 1 tablespoon ground coriander
– 1 teaspoon floor cinnamon
– 1/2 teaspoon ground cloves
– 1/4 teaspoon ground black pepper
– 1/4 cup all-purpose flour
– three cups chicken broth
– 1/2 cup heavy cream (optional)
– Salt and pepper to taste

Instructions:

1) Preheat oven to 350 degrees F (175 levels C).
2) Place the chicken in a roasting pan and season with salt and pepper.
3) In a big skillet, sauté the onion, carrots, celery, and garlic in olive oil till softened.
