Ingredients

For the Sloppy Joe Filling

Ground Beef:

1 pound lean ground beef

Onion:

1 medium onion, chopped

Green Bell Pepper:

1 green bell pepper, chopped

Garlic:

2 cloves garlic, minced

Sloppy Joe Sauce:

1 can (15 ounces) tomato sauce

1/2 can (15 ounces) tomato paste

1/2 cup brown sugar

1/4 cup Worcestershire sauce

2 tablespoons yellow mustard

2 tablespoons apple cider vinegar

Seasonings:

Salt and black pepper to taste

Dried oregano (optional)

Dried thyme (optional)

For the Quesadillas

Ingredients:

  • 1 pound floor beef
  • 1 onion, chopped
  • 2 green bell peppers, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can tomato paste
  • 1/2 cup brown sugar
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 (12-inch) flour tortillas
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1 cup (4 ounces) shredded pepper Jack cheese
  • Sour cream, for serving
  • Guacamole, for serving
  • Chopped contemporary cilantro, for serving

Instructions

To make the Sloppy Joe Filling

In a large skillet, brown ground beef over medium warmth; drain. Stir in onion and green pepper; prepare dinner and stir for 5 to 7 minutes or until tender.

Stir in sloppy joe sauce, water, brown sugar, mustard, Worcestershire sauce, and seasonings. Bring to a boil. Reduce warmth; simmer, uncovered, for 30 minutes or until thickened. Serve heat on toasted tortillas.
