Mayo Free Cheesy Spinach Dip with Veggie Kabobs

Ingredients
2 teaspoons olive oil
1 clove garlic chopped
4 cups fresh spinach
1/4 teaspoon salt
1 cup ricotta cheese part skim
4 ounces cream cheese
1/4 cup Parmesan cheese
1 cup broccoli fresh, crowns
1 cup cucumbers fresh, sliced
1/2 cup yellow squash sliced
1/2 cup cherry tomatoes
Instructions
Heat oil in saute pan and add garlic, spinach and salt.
Saute until wilted. Set aside.
In a blender add ricotta cheese and Neufchatel and blend until smooth.
Add cooled spinach and Parmesan cheese and pulse 5-7 times until all ingredients are incorporated. Do not over blend.
Makes about 1 3/4 cups.
Serve or refrigerate.
