Keto Pizza Cauliflower Casserole (low carb and gluten free)

Ingredients
1 cauliflower about 8 cups florets or 4 cups riced
1/3 cup coconut flour
1 teaspoon onion powder
1 tsp salt
1 tsp garlic powder
1/2 tsp pepper
8 ounces bacon uncured, low sodium
1 1/2 pounds pork sausage casings removed
1 ounce pepperoni sliced
2 cups mozzarella cheese shredded
Instructions
Steam the cauliflower until tender.
Place in food processor and pulse until fine crumbs or leave chunkier if you like.

In a large bowl add processed cauliflower, flour, onion powder, garlic powder, salt and pepper.

Spread cauliflower mixture into a 9 by 13 baking dish.
Preheat oven to 350 degrees F.
Cook bacon but not crisp, leave it slightly soft as it will cook more in the oven. Set aside to drain on paper towels.

Brown the sausage until no longer pink. Remove with a slotted spoon to a paper towel lined bowl and set aside.

Sprinkle 1 cup mozzarella over the layer of cauliflower mixture in the baking dish.
Top with the sausage, pepperoni and the bacon.
Sprinkle remaining mozzarella cheese over the top and bake 20 minutes uncovered until cheese is melted.
