2 medium zucchini
2 to matoes
cooking spray
kosher salt
freshly ground black pepper
a few sprigs fresh parsley
INSTRUCTIONS

Wash zucchini and trim off the ends.
Using a mandolin or vegetable peeler slice the zucchini lengthwise in thin slices.
