Couscous And Dried Apricot Stuffed Chicken

1 (3 1/2 to 4-pound) complete chicken

Salt and freshly ground black pepper to taste

1 teaspoon olive oil

1/2 cup couscous

1/2 cup chicken broth

1/2 cup dried apricots, chopped

1/4 cup chopped contemporary parsley

1/4 cup chopped recent mint

1/4 cup chopped recent cilantro

1/4 teaspoon ground cinnamon

1/4 teaspoon floor turmeric

1/4 teaspoon floor ginger

1/4 teaspoon floor cumin

1/4 teaspoon floor coriander

Instructions

To prepare the stuffing:

1. In a big bowl, combine the couscous, boiling water, and salt. Stir to mix and let stand for five minutes, or until the couscous is tender.

2. Add the apricots, onion, celery, carrots, parsley, salt, and pepper to the couscous. Stir to mix and set aside.

To prepare the chicken:

Preheat the oven to 375 levels F (190 degrees C). Place the chicken breasts in a baking dish.

In a medium bowl, mix the couscous, dried apricots, onion, celery, parsley, salt, and pepper. Add the recent chicken broth and stir till the couscous is moistened.

Stuff the chicken breasts with the couscous mixture.

Bake in the preheated oven for half-hour, or until the chicken is cooked through.
