Low Carb Chocolate Pots De Creme

Ingredients
1 cup light cream
1/4 cup heavy cream
2/3 cup organic mayonnaise
1/4 cup confectioner”s Swerve sweetener
7 ounces 85% dark chocolate chopped (I used Green & Black organic)
2 tsp coffee granules
2 tsp vanilla extract
1/2 tsp chocolate liquid stevia
Instructions
Whisk together the light cream, heavy cream, mayo and Swerve sweetener in a saucepan.
Heat mixture over medium heat but do not boil, until it thickens, about 4-5 minutes.
Remove from heat and stir in chocolate and coffee granules.
Continue to stir until smooth.
Remove from heat and add in the remaining ingredients.
Pour about 1/3 cup into six mason jars.
Cover and refrigerate until set, about 3 hours.
When ready to serve garnish with fresh berries andsugar free whipped cream.
