For the Chicken
- 1 complete chicken (about four pounds)

- 1 loaf (1 pound) cranberry pecan bread, cubed
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1 tablespoon chopped fresh parsley
- 1 tablespoon dried cranberries
- 1 tablespoon chopped pecans
- 1/4 cup melted butter
- 1/2 cup chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

- Preheat oven to 375 degrees F (190 degrees C).
- In a big bowl, combine the bread cubes, onion, celery, and pecans.
