Italian Sausage And Polenta Stuffed Chicken

1 pound Italian sausage, casings removed

2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
4 cups chicken broth

1/2 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
Salt and pepper to taste

1 onion, chopped
3 cloves garlic, minced
1/4 cup olive oil
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
1 (15 ounce) can tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon sugar

In a big skillet, brown the sausage over medium warmth. Drain the fats.
Stir within the polenta, chicken broth, parsley, sage, salt, and pepper. Cook till the polenta is thickened, about 5 minutes.
