In a big saucepan, melt butter and oil over medium-low heat. Stir in onions, sugar, and a beneficiant pinch of salt and pepper. Cook for about quarter-hour, or till onions are deep golden-brown. Lower heat and simmer for another 30 minutes till onions are very delicate and caramelized. Season to style with salt and pepper.

To Make the Gravy:

1. Skim the fat from the roasting pan and measure three tablespoons into a small bowl, allowing the remaining fats to chill barely. Sprinkle the flour over the fat and whisk to combine. Set the bowl apart.

2. Place the roasting pan over medium heat. Add the onions and prepare dinner, stirring sometimes, till softened and browned around the edges, about 10 minutes.

3. Gradually whisk the flour mixture into the onions until smooth. Cook, whisking constantly, until the mixture thickens, about 2 minutes.
